In The Kitchen – Garden Party Recipe Must Haves

We finally made it to another milestone towards ‘normal’ life. Whatever that means now! With the latest restriction changes, we can once again invite friends over, enjoy restaurant meals indoors, and hug (with caution of course).

If you’ve invited friends or family over this bank holiday weekend, why not go all out and create some easy dishes for all to enjoy. Whether you’re creating a light lunch, or a quick supper, these garden party recipes are must haves.

Smoked Trout, Horseradish & New Potato Salad

A recipe by one of the nation’s favourite, Jamie Oliver, who kept us going through lockdown with his Keep Cooking and Carry On tv show – we love how light and fresh this is.

You will need

800g new potatoes
4 tablespoons crème fraiche, or sourced cream
2 lemons
Extra virgin olive oil
4 heaped tablespoons fresh horseradish, or jarred horseradish
1 bunch of fresh flat-leaf parsley (30g)
½ bunch of fresh chives
1 small bunch of spring onions
300g hot-smoked trout, from sustainable sources

Steps to follow

Scrub the potatoes and cook them in boiling salted water until tender, then drain

While still warm, but cool enough to handle, either cut the potatoes in half or squash them into a large salad bowl

Add the crème fraiche, the zest and juice of 1 lemon and 4 tablespoons of oil. Toss around, then season to taste with sea salt and black pepper

Add or finely grate in the horseradish, tasting as you go, then finely chop the parsley and chives and throw these into the bowl

Trim, finely slice and add the spring onions, tear in the smoked trout, and mix together

Balance your salad with seasoning, adding an extra squeeze of lemon juice if needed. Perhaps add a bit more horseradish for that extra spicy kick.

Jerk Halloumi Burger

Big on flavour, we loved this recipe by Olive magazine. Easy to pull together, this dish will be ready in just 20 minutes, so you can spend more time catching up, and less time cooking.

You will need

¼ red onion, very thinly sliced
Golden caster sugar
Red wine vinegar
1 large red pepper
250g halloumi
4 (toasted) brioche burger buns
1 tablespoon jerk seasoning
3 tablespoons mayonnaise
50g rocket

Steps to follow

Put the onion in a bowl with a good pinch of sugar and a splash of vinegar. Toss and leave while you make the burgers

Cut the pepper into 4 wide squarish pieces. Rub with oil and griddle or grill until charred and softened a bit

Slice the halloumi into 4 side pieces. Rub with oil and the jerk seasoning, then griddle or grill until golden

Spread a little mayo on the bun bases, add some rocket, then top with the red pepper and a slice of halloumi. Drain the onions and add to the burgers, then serve.

Quick Peach Melba Crumbles

Who doesn’t love a BBC Good Food recipe? Especially one that only takes 10 minutes to create from start to finish. A perfectly light dessert, this is the perfect sweet to finish food with friends.

You will need

40g of canned, sliced peaches in syrup
1 tablespoon butter
150g raspberries
100ml whipping cream
½ tablespoon icing sugar
100g granola

Steps to follow

Pour the can of peaches, with the syrup, into a small saucepan over a medium heat. Add the butter and simmer until the peaches are hot. Once simmering, add the raspberries and cook for 1-2 minutes more until hot

Meanwhile, put the cream in a large bowl with the icing sugar and whisk until lightly whipped

Use a slotted spoon, put the peach Melba mixture into four serving dishes and top each with a sprinkling of granola and a dollop of cream.
